Menu Planning Monday

I remember several years ago my coworker talked about making potato leek soup and I've been wanting to make it ever since. Most of my soups are broth or tomato based, so I thought the potato soup would be a nice change of pace. I was proud of myself for planning my menu before Farmer's Market, so I could take advantage of more local produce. I usually just buy whatever looks good and then have to buy a lot of produce at the grocery store, too. Unfortunately, I was really disappointed with this soup. It pretty much tasted like mashed potatoes. Neither Eric and I were really big fans. I guess if you'd want only mashed potatoes for dinner you'd like it. The recipe didn't say to mash it, but I did anyway. I asked Eric if he wouldn't have liked it better chunky, but he said the flavor would be the same. True. There were really high ratings, so maybe it was just us? Oh well, you win some, you lose some.

Saturday- Potato leek soup and sourdough bread from Tin Roof Bakery (bought at Farmer's Market!).

Sunday- French dip sandwiches, au jus, and broccoli with cheese sauce (my mother in law's special sauce- cheddar cheese and mustard. Super easy and delicious!). Eric LOVED this! He said, "if we had a restaurant I would want this on the menu." (That made me laugh!) Definitely one of his top meals and super easy. This will definitely become a regular meal. We used fresh Safeway rolls, swiss cheese, and Sierra Nevada Stout mustard.

Monday- Black bean chowder (another one of our favorites meals!), with jalapeno cheddar cornbread for us and regular for the kids.

Tuesday- Pasta (whole wheat pasta or raviolis), broccoli, bread, salad
Wednesday- Mini fritattas, hashbrowns, kiwi from Farmer's Market

Thursday- Split pea soup

Friday- Chili rellenos, rice, beans, veggie or salad


Today the weather is so perfect! After homeschool Eric took Judah to work with him, so I decided to take the little boys on a walk in the park. It is clear and sunny and cool, but not cold. After pushing my double stroller I could definitely tell that I am at the end of my fourth pregnancy. My body is getting achy and tired. At the end I let Samuel and Silas out to walk and check everything out. It, also, let me walk at a snail's pace. I hope the weather stays just like this for awhile!
