Lazy Rellenos

I love the Pioneer Woman. I discovered her several years ago, right after she started the series on her courtship and marriage. I've made lots and lots and lots of her recipes and there have only been a few that I didn't love. For Thanksgiving I'll be making the cornbread stuffing for the third year in a row. It is delicious!

Eric pre-ordered her cookbook for me, so I got it the first day it was available. I highly recommend it. It's even fun to read if you don't make anything.


Tonight I decided to try the "Lazy Chile Rellenos." They were super easy and really good! Because the recipe called for "large" eggs and our organic, local eggs aren't large I used 6 instead of 5. I only added a dash of cayenne pepper in hopes that the boys would eat it (only Silas did) and I ended up having to cook it for 45-50 minutes instead of 30.

Eric loved it and wanted to make sure there was some for leftovers. There's lots!! Kind of random, but I was reading the comments on the Pioneer Woman site. One lady left a comment saying, "after I make these my husband will want to propose all over again." I told Eric and he said, "Yeah, after eating them I want to renew our vows."

Katie asked me about leftovers. We usually don't have leftovers for dinner. I either freeze what's left- most of the recipes I use tend to make 2-3 meals. Or, we eat the leftovers for lunch. I never really end up making all the meals planned for the week. Things come up and we have sandwiches or we go out to eat. This week we ended up having dinner with Eric's parents and grandma, so I didn't have to cook that night.

I'm listening to Christmas music tonight and I LOVE IT! Last night we were watching a show and there was a Walmart commercial where all the lights at the checkouts were blinking and playing Christmas music. I was like, "OHMYGOSH! It's almost Christmas!" Eric thought I was joking (like usual), but I was dead serious. Christmas is going to come so quickly and that means our baby will be here so soon. I know I keep saying it, but I just can't believe how fast this pregnancy is going and how soon we will meet our babe. So, so, so, so excited!

    I think I might start menu planning too. grocery shopping will be much easier. my hardest part is buying something special for a recipe, only to find it missing when it comes time to use it. I'll have to label things for hubby, so he knows not to touch it!! IF YOU WANT DINNER, DO NOT EAT THIS NOW! :)

  3. I just read an article about pioneer woman in a magazine yesterday & I clipped out the page from the magazine so that I'd remember to check her out. Now I'll definitely make sure I do!
