One thing I plan to do before the new baby is born is freeze a bunch of meals. With the other kids we were so blessed to have my mom, mother in law, and friends bring us meals. This time I want to have a stock of meals to last us awhile. It will be one less thing to think about.

Last week I made one pan of chicken enchiladas for dinner and another for the freezer. I think I'll cook it this week and make sure it tastes just as good as the first.

What are some of your best freeze-able meals?













we always have at least 4 bags of turkey spaghetti sauce and turkey chili in our freezer...makes for super easy meals and you can puree so many veggies that you're kids might not like right into them. I also always like a shephard's pie on hand too...oh, the taste's of fall!

ReplyDeleteI think lasagna is a good one! I haven't tried it yet, but a friend of mine gets together with her mom and sister-in-law and they make a whole bunch of lasagnas at once then freeze them! So it must work :) Nice thing is that you can have variety - chicken, beef, veggie, etc.

I freeze spaghetti sauce, chilli, taco soup, homemade chicken pot-pie, calzones, english muffin pizzas (for lunches)...It's always so nice on a busy day to just pull something out of the freezer, wait an hour or two and bake it. Nothing time-consuming but still a quality, home-cooked meal.
