There are so many changes that I'm making in my life. I feel so good about life and incredibly blessed by God. I plan to write posts about each of those things, but one of them, like I mentioned before, is planning meals, cooking more, and cooking healthy meals from whole foods. Eric is much happier eating good food at home and we're saving money.
Monday- Tostadas/nachos with salsa chicken (from the freezer!), kidney beans, veggie flax seed chips from Trader Joe's (my favorite!), tomatoes from various peoples' gardens, etc..
Tuesday- This pot roast meal I got from Stephanie (with green beans, too), who got it from Faithful Provisions. I'm even making the rolls. I've been doing a lot of baking lately!
Wednesday- A double batch of chicken enchiladas with green sauce (one for us, one for the freezer), black beans, spanish rice (any tips on how to make this? I tried last week and the result was burnt on the bottom and soggy on the top), green beans (we bought the Costco pack)
Thursday- Chili and homemade cornbread muffins (a first time trying this recipe)
Friday- Chili dogs (all beef hotdogs and wheat buns from TJs), watermelon
Not sure about the weekend. Maybe personal pizzas or lentils (I have everything for lentils, but they might not be very appetizing in the hot weather.)
Everyone is up early this morning. Silas woke up when Eric did, then Judah, and now Samuel. We'll have a relaxing morning before Judah's second week of music class. Then, Brooke is coming over for lunch!

I've got a delicious and easy recepie for Chicken Tortilla soup...well, it's kind of made up but a staple at our house.
ReplyDeleteAll goes into the crock pot:
3 chicken breasts (frozen or fresh)
1 orange pepper, diced
1 red onion, diced
4-6 cloves of garlic, minced
1 can of whole or diced tomatoes
1 can of prepared enchilada sauce
6 cups of chicken stock
1 TBS. cumin
2 tea. chili powder
cook on high for 4-5 hours, take out chicken, shred with 2 forks, return to crock pot and add 2 cups of frozen corn.
serve with chopped cilantro, shredded cheese, sour cream and of course, tortilla chips!
opps...I forgot the can of greeen chilies...how could I forget that???
